Matcha is the most widely known type of Japanese tea. Matcha is planted with a special shading method before they are harvested. The processing of matcha requires the removal of leaf vein and fine stems. This allows matcha to be completely soluble in water in its powdered form. Matcha has a higher caffeine level compared to hojicha. Matcha makes an ideal coffee substitute as it has a higher caffeine level but WITHOUT the crashing effect afterwards.
